- 2 large chicken breasts (about 2 pounds), sliced into thin cutlets
- Kosher salt and coarsely ground pepper, to taste
- 2 tablespoons olive oil
- 3 tablespoons butter
- 1 small shallot, minced
- 4 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1/2 cup low-sodium chicken broth
- 1 cup half and half
- 1/4 cup fresh lemon juice (from 1–2 lemons)
- 1 teaspoon lemon pepper seasoning
- Fresh parsley or basil for garnish
Instructions
- Pat chicken cutlets dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken cutlets for about 5-7 minutes on each side until cooked through (internal temperature should reach 165°F). Remove from the pan and set aside.
- In the same skillet, reduce heat to medium-low and melt butter. Sauté shallots until softened, then add garlic.
- Sprinkle flour into the pan while stirring for about 2 minutes. Gradually add chicken broth, then stir in half and half and bring to a boil before simmering until thickened.
- Stir in lemon juice and lemon pepper seasoning. Return chicken to the skillet, nestling it into the sauce with lemon slices. Heat through.
- Garnish with fresh herbs before serving warm.
