Ingredients

  • 2 ½ pounds russet or Yukon gold potatoes, thinly sliced
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme
  • ½ teaspoon cayenne pepper (optional)
  • 3 cups grated cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.
  2. In a saucepan over medium heat, melt butter and sauté onions until softened. Add garlic and thyme for one minute.
  3. Stir in flour and gradually whisk in heavy cream until smooth. Season with salt, pepper, and cayenne pepper if desired. Mix in 2 cups of cheddar cheese until melted.
  4. Layer half of the sliced potatoes in the baking dish, pour half of the cheese sauce over them, and sprinkle with half of the remaining cheese. Repeat layers.
  5. Cover with foil and bake for 40 minutes. Remove foil, top with leftover cheese, and bake uncovered for an additional 20 minutes until golden brown.
