  • 1 teaspoon vanilla extract (for the dough)
  • 4 tablespoons unsalted butter, softened (for the dough)
  • ½ cup unsalted butter, room temperature (for the filling)
  • ½ cup light or dark brown sugar (for the filling)
  • 1 teaspoon ground cinnamon (for the filling)
  • 6 tablespoons unsalted butter, melted (for the crumb topping)
  • ¾ cup + 1 tablespoon all-purpose flour (for the crumb topping)
  • ½ cup granulated sugar (for the crumb topping)
  • 2 tablespoons light brown sugar, packed (for the crumb topping)
  • ½ teaspoon ground cinnamon (for the crumb topping)
  • 4 tablespoons unsalted butter, room temperature (for the frosting)
  • 2 oz cream cheese, room temperature (for the frosting)
  • 1 cup powdered sugar (for the frosting)
  • 2½ tablespoons heavy cream (for the frosting)

Instructions

  1. Prepare the peach jam by cooking cubed peaches with sugar and lemon juice until thickened. Cool completely.
  2. Make tangzhong by whisking water and flour over medium heat until it forms a paste; let it cool.
  3. Combine flour, sugar, yeast, and salt in a stand mixer. Add milk, egg, vanilla extract, and tangzhong; mix until dough forms. Knead in softened butter until smooth.
  4. Roll out the dough, spread brown sugar filling and peach jam on top, then roll tightly into swirls. Cut into 12 pieces and place in a baking dish to rise again.
  5. Bake at 325°F (162°C) for 30–35 minutes or until golden brown.
  6. Make frosting by mixing cream cheese and butter; add powdered sugar and heavy cream until smooth. Drizzle over warm rolls.
