Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Carrots: In a large bowl, toss carrots with olive oil, salt, and pepper. Spread them out evenly on the prepared baking sheet.
Roast: Roast for 20–25 minutes, turning halfway, until tender and slightly caramelized.
Make the Glaze: While the carrots roast, mix balsamic vinegar and honey in a small bowl.
Glaze & Finish: In the last 5 minutes of roasting, drizzle the balsamic mixture over the carrots and toss to coat. Return to the oven until glossy and sticky.
Garnish: Sprinkle with fresh thyme if desired and serve warm.
