Balsamic Glazed Roasted Carrots

Equipment

  • Parchment paper or silicone mat
  • Large mixing bowl
  • Small bowl (for the glaze)
  • Spoon or basting brush
  • Sharp knife & vegetable peeler

Ingredients

  • 1 lb carrots peeled and cut into sticks or left whole if thin
  • tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh thyme leaves optional

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare Carrots: In a large bowl, toss carrots with olive oil, salt, and pepper. Spread them out evenly on the prepared baking sheet.
  • Roast: Roast for 20–25 minutes, turning halfway, until tender and slightly caramelized.
  • Make the Glaze: While the carrots roast, mix balsamic vinegar and honey in a small bowl.
  • Glaze & Finish: In the last 5 minutes of roasting, drizzle the balsamic mixture over the carrots and toss to coat. Return to the oven until glossy and sticky.
  • Garnish: Sprinkle with fresh thyme if desired and serve warm.
