No-bake Biscoff truffles are a decadent 4-ingredient treat perfect for gifting, dessert parties, or simply indulging at home. These spiced cookie truffles are quick to prepare, require no oven, and make for an easy holiday or year-round treat!

Ingredients

  • 1 8-ounce package cream cheese, softened
  • 32 Lotus Biscoff cookies 8.8 ounces
  • 1/4 cup Biscoff cookie butter
  • 10-12 ounces white chocolate finely chopped
  • 2 tablespoons Biscoff cookie butter optional, for decoration

Instructions

  • Prepare the Baking Sheet – Line a baking sheet with parchment paper and set aside.
  • Process the Cookies – Place the Biscoff cookies in a food processor and pulse until they form fine crumbs.
  • Make the Dough – In a microwave-safe bowl, heat 1/4 cup of cookie butter for 15-20 seconds, then stir. Add the warmed cookie butter and softened cream cheese to the food processor with the cookie crumbs. Pulse until fully combined into a thick dough.
  • Form the Truffles – Scoop out the dough and roll it into 1-inch balls using your hands. Place them on the lined baking sheet and chill for at least 1 hour in the fridge or 20 minutes in the freezer.
  • Melt the White Chocolate – Just before removing the truffle balls from the fridge, melt the white chocolate in the microwave in 30-second increments, stirring after each interval, until smooth. Alternatively, use a double boiler.
  • Coat the Truffles – Using a fork, dip each truffle ball into the melted white chocolate, coating it completely. Shake gently to remove excess chocolate, then place the coated truffles back on the parchment-lined baking sheet.
  • Chill Again – Return the baking sheet to the fridge and chill for an additional 1 hour, or until the chocolate coating is fully set.
  • Decorate (Optional) – If desired, microwave 2 tablespoons of Biscoff cookie butter for 15 seconds, stir, and drizzle or pipe it over the truffles. Chill again to set the decoration before serving.

Notes

Biscoff Cookies – Lotus Biscoff cookies come in 8.8-ounce packages (32 cookies).
You may need two packages to ensure you have enough.
White Chocolate – The recipe calls for more white chocolate than necessary to ensure easy coating.
Food Processor – If using a small food processor, process the cookies in two batches, then combine before adding other ingredients.
Melting Method – White chocolate can also be melted in a double boiler instead of the microwave.
