Ingredients

Meatballs

  • 2 pounds ground turkey
  • 1 cup pork rind crumbs
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder optional
  • 1 teaspoon Italian seasoning optional
  • Salt to taste
  • Pepper to taste

Sauce

  • 1 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Salt to taste
  • Pepper to taste
  • Optional: Fresh basil for garnish

Instructions

  • Preheat & Prep: Preheat the oven to 400°F (200°C) and grease a baking dish with butter.
  • Mix the Meatballs: In a large bowl, combine the ground turkey, pork rind crumbs, egg, ricotta, Parmesan, garlic powder (if using), Italian seasoning (if using), salt, and pepper. Mix well and shape into evenly sized meatballs.
  • Bake: Arrange the meatballs in the greased dish and bake for 20 minutes, or until fully cooked and golden brown.
  • Prepare the Sauce: In a skillet over medium heat, melt the butter. Add the minced garlic and cook until fragrant. Stir in the heavy cream, salt, and pepper, and let it simmer until slightly thickened. Add the grated Parmesan and stir until smooth.
  • Coat the Meatballs: Add the baked meatballs to the sauce and gently toss to coat.
  • Serve & Enjoy: Garnish with fresh basil if desired and serve hot.

Notes

Carnivore-Friendly Modifications: For a 100% strict carnivore meal, leave out the garlic powder and Italian seasoning.
Storage & Reheating: Store leftovers in the fridge for up to 4 days. Reheat gently on the stove or in the microwave.
