For the Beef Mixture:
- 1.5 lbs lean ground beef
- 1 yellow onion diced
- 1 tablespoon chopped garlic
- 1 10.5 oz can condensed cheddar soup
- 1 10.5 oz can condensed cream of mushroom soup
- ½ cup milk
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups shredded cheddar cheese divided
For the Biscuit Topping:
- 1 box Cheddar Bay Biscuit mix plus included seasoning packet
- 1 cup shredded cheddar cheese
- 2 cups milk
- ¼ cup butter melted
- Fresh chopped parsley optional, for garnish
Prepare the Ground Beef Mixture:
Heat a large non-stick skillet over medium-high heat.
Add ground beef and diced onion, cooking until the beef is fully browned.
Drain any excess grease if needed.
Stir in cheddar soup, cream of mushroom soup, milk, salt, and pepper until well combined.
Mix in 1 cup of shredded cheddar cheese and stir until melted.
Remove from heat.
Assemble the Casserole:
Pour the beef mixture into the prepared baking dish, spreading it evenly.
Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
Prepare the Biscuit Topping:
In a large mixing bowl, combine the biscuit mix (without the seasoning packet) with shredded cheddar cheese and milk.
Stir until the batter is smooth and no large lumps remain.
Pour the biscuit batter evenly over the beef mixture.
Add the Finishing Touches:
In a small bowl, mix melted butter with the seasoning packet from the biscuit mix.
Brush this buttery seasoning mixture over the biscuit topping for extra flavor.
Let the casserole rest for 5 minutes before serving to allow the filling to thicken.
Serve & Enjoy!
Garnish with fresh chopped parsley, if desired.
Serve warm and enjoy this rich, cheesy, and satisfying dish!
Extra creamy filling? Add an extra splash of milk if you prefer a looser consistency.
Browning too quickly? If the biscuit topping starts to brown before the center is fully cooked, cover with foil during baking.
