Ingredients

  • 2 pounds ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon Slap Ya Mama seasoning or substitute with Cajun seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes
  • 1 1-ounce packet taco seasoning mix
  • 1/2 cup water
  • 1 4-ounce can diced green chilies
  • 1 15-ounce can nacho cheese sauce
  • 1 5.6-ounce package KnorrĀ® Mexican rice (or similar)
  • 3 cups Colby jack cheese shredded
  • 1 3.5-ounce package Santa Fe-style tortilla strips
  • 1 cup sour cream
  • 10 large flour tortillas burrito size

Instructions

Cook the Beef Mixture:

  • In a large skillet or cast iron pan over medium heat, combine ground beef, diced onions, Slap Ya Mama seasoning, black pepper, cumin, cayenne pepper, and red pepper flakes. Stir to combine.
  • Cook until the beef is browned and the onions are tender. Add garlic and diced green chilies, and cook for an additional 2 minutes.
  • Drain any excess grease, return the mixture to the pan, and sprinkle with taco seasoning mix. Add water and simmer on low heat for 5 minutes.

Cook the Rice:

  • Prepare the KnorrĀ® Mexican rice according to the package instructions. Once cooked, set aside.

Heat the Nacho Cheese Sauce:

  • In a small saucepan, heat the nacho cheese sauce over low heat until warm and smooth.

Assemble the Burritos:

  • Warm the tortillas in the microwave or on a skillet for a few seconds to make them pliable.
  • Layer each tortilla with the cooked beef mixture, a spoonful of nacho cheese sauce, a scoop of rice, shredded cheese, a dollop of sour cream, and a handful of tortilla strips.

Wrap the Burritos:

  • Fold the sides of the tortilla inward, then roll tightly from the bottom to form a burrito.

Grill the Burritos (Optional):

  • For a crispy finish, grill the burritos on a hot skillet or stovetop grill pan for 1-2 minutes per side until golden and lightly crisp.
