Cheesy Garlic Herb Roasted Potatoes

Ingredients

  • 2 pounds baby potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley or 1 tsp dried
  • Optional: chopped chives or green onions for garnish

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prep Potatoes: In a large bowl, toss halved baby potatoes with olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
  • Roast: Spread the potatoes cut-side down on the baking sheet. Roast for 25–30 minutes or until golden and crispy.
  • Add Cheese: Remove the pan from the oven, sprinkle mozzarella and Parmesan evenly over the potatoes, and return to the oven for 5–7 minutes until melted and bubbly.
  • Garnish & Serve: Sprinkle with fresh parsley and any optional herbs. Serve hot as a side dish or snack.
