Ingredients

  • 1.5 pounds ground beef
  • 1 yellow onion finely diced
  • 4 pounds russet potatoes peeled and sliced into ¼-inch pieces
  • 2 cups grated cheddar cheese
  • 1 10.75-ounce can condensed cheddar soup
  • 1 12-ounce can evaporated milk
  • ½ cup milk
  • ½ teaspoon garlic powder
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

Prepare the Oven and Baking Dish

  • Preheat the oven to 350°F (177°C). Grease a 9×13-inch baking dish with nonstick spray and set aside.

Cook the Ground Beef

  • In a large skillet over medium-high heat, cook the ground beef and diced onion, seasoning with salt and black pepper. Break up the beef as it cooks and continue until it is browned and no longer pink. Drain excess fat and set aside.

Assemble the Casserole

  • In the prepared baking dish, layer the sliced potatoes evenly. Season with salt and pepper. Add ¼ of the cooked beef mixture on top, followed by ¼ of the grated cheddar cheese. Repeat this process three more times, ensuring even distribution of ingredients.

Prepare the Sauce

  • In a small bowl, whisk together the condensed cheddar soup, evaporated milk, milk, and garlic powder until smooth.

Bake the Casserole

  • Pour the prepared sauce evenly over the layered ingredients. Cover the dish tightly with aluminum foil and bake for 60 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and the sauce is bubbling.
