Ingredients

For the Casserole:

  • 1.5 lbs diced chicken breast
  • 1 large zucchini thinly sliced
  • ½ yellow onion diced
  • 1 pint grape tomatoes
  • cups basmati or long-grain rice
  • 1 lemon cut into wedges
  • ¼ cup crumbled feta plus extra for topping
  • 3 cups chicken stock
  • 2 tablespoons Greek seasoning

Paprika Seasoning Mix:

  • 2 teaspoons smoked paprika
  • 1 teaspoon seasoning salt
  • ½ teaspoon turmeric
  • ¼ – ½ teaspoon cayenne pepper
  • Pickled Red Onions:
  • 1 medium red onion thinly sliced
  • ¾ cup red wine vinegar or apple cider vinegar
  • 2 teaspoons sugar
  • 2 teaspoons kosher salt

Toppings & Serving:

  • Extra feta
  • Pickled red onions
  • Tzatziki sauce
  • Toom garlic dip
  • Chopped parsley
  • Warm pita bread

Instructions

Prepare Seasoning Mix:

  • In a small bowl, combine smoked paprika, seasoning salt, turmeric, and cayenne.

Pickle the Onions:

  • Heat vinegar, sugar, and salt in the microwave for 45 seconds.
  • Add sliced onions and let sit in the fridge until serving.

Assemble & Bake:

  • Preheat oven to 375°F (190°C).
  • In a 9×13-inch baking dish, toss chicken with half the paprika mix and 1 tablespoon Greek seasoning.
  • Spread rice over the chicken, then layer zucchini and tomatoes.
  • Whisk chicken stock with remaining spices and Greek seasoning, then pour over the dish.
  • Sprinkle with ¼ cup feta and arrange lemon wedges on top.
  • Cover with foil and bake for 40 minutes.
  • Uncover and bake for 10-20 minutes more until rice is fully cooked.

Serve:

  • Fluff the casserole, discard lemon wedges if desired.
  • Top with feta, pickled onions, tzatziki, garlic dip, and parsley.
  • Serve warm with pita bread.

Notes

Flavor Boost: Add kalamata olives before baking for extra Mediterranean flavor.
Leftovers: Store in an airtight container for up to 3 days.
