Ingredients

  • 2 ¼ cups flour
  • cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

Heat the Oil:

  • Pour 2 inches of oil into a large heavy-bottomed pan and heat to 350°F. Leave at least 2 inches of space between the oil and the top of the pan to prevent spills.

Prepare the Batter:

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
  • Add the milk, eggs, and vanilla extract. Whisk until the batter is smooth and has the consistency of thick pancake batter.

Fry the Fries:

  • Fill a piping bag with the batter. Pipe 4-5 small, parallel tubes of batter directly into the hot oil.
  • Fry for 2-3 minutes or until golden on all sides, rotating the fries as they cook to ensure even browning since they will float.

Drain the Fries:

  • Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
  • Repeat until all the batter is used.

Serve:

  • Serve the funnel cake fries warm with marshmallow fluff, warm jam, or your favorite dipping sauces. Sprinkle with powdered sugar for the classic carnival touch.

Notes

  • The batter should have a thick, pancake-like consistency before frying.
  • Rotate the fries in the oil as they cook to ensure all sides are evenly golden.
  • Draining the fries on paper towels is crucial to avoid sogginess from excess oil.
