Ingredients

  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 4 cups diced potatoes about 4 medium potatoes
  • 4 cups beef broth
  • 1 can 15 oz cream of mushroom soup
  • 1 cup milk or half-and-half
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese optional
  • ½ cup sour cream optional
  • Fresh parsley for garnish (optional)

Instructions

Brown the Beef:

  • Heat a skillet over medium heat. Cook the ground beef until browned, then drain excess fat.
  • Transfer the beef to the Crock Pot.

Assemble the Soup:

  • Add the chopped onion, garlic, diced potatoes, and beef broth. Stir to mix.
  • Stir in the cream of mushroom soup, milk, thyme, parsley, salt, and pepper.

Slow Cook:

  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.

Finish & Serve:

  • Stir in shredded cheddar (if using) and sour cream for a richer consistency.
  • Ladle into bowls and garnish with parsley if desired.

Notes

Customize It: Swap ground beef for ground turkey for a lighter version.
Storage Tip: Keeps well in the fridge for up to 3 days.
