Ingredients

For the Potatoes:

  • ¼ cup ghee or butter divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes cut into ½-inch cubes
  • 3 garlic cloves minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt plus more to taste
  • ¼ teaspoon ground black pepper plus more to taste

For the Steak:

  • 1 ¼ lb sirloin steak cut into ½-inch cubes
  • Fresh parsley chopped (for garnish)

Instructions

  • Heat the Skillet: Heat a large cast-iron skillet over medium heat. Add the olive oil and 2 tablespoons of ghee or butter.

Cook the Potatoes:

  • Once the ghee has melted, add the potatoes to the skillet. Sprinkle with minced garlic, thyme, oregano, salt, and pepper.
  • Cook for 2-3 minutes before stirring. Continue cooking, stirring every 1-2 minutes, until the potatoes are golden brown and fork-tender (about 8-10 minutes).
  • If the potatoes are crowded in the pan or cut into larger pieces, they may take longer to cook.
  • Remove the potatoes and any browned bits from the pan and set aside.

Sear the Steak:

  • Increase the heat to medium-high and add the remaining 2 tablespoons of ghee or butter to the pan.
  • Once melted, add the steak pieces and season with a dash of salt and pepper.
  • Let the steak cook undisturbed for at least 2 minutes to develop a good sear. Then, stir and cook for an additional 1-2 minutes until golden brown.

Combine & Serve:

  • Add the cooked potatoes back to the skillet and stir everything together. Adjust seasoning with additional salt and pepper, if needed.
  • Garnish with freshly chopped parsley and serve immediately.

Notes

You can substitute other small potato varieties like red or fingerling potatoes.
For quick and even cooking, cut the potatoes into small, uniform pieces.
To achieve a flavorful crust on the steak, avoid stirring too soon while searing.
