Ingredients

  • 3/4 cup cold water
  • 5 tablespoons unflavored gelatin powder
  • 1/2 cup strongly brewed green tea use 4 tea bags for bold flavor
  • 1/3 cup ginger juice
  • 1/4 cup fresh lemon juice or preservative-free bottled lemon juice
  • Optional: Honey to taste

Preparation Tips

  • Blooming Gelatin: Sprinkle gelatin evenly over cold water and let it rest for 5 minutes to avoid clumps.
  • Strong Tea: Use 4 tea bags steeped in 1/2 cup of hot water for a more robust flavor.
  • Fresh Ginger Juice: Use a juicer or grate fresh ginger then squeeze the pulp through cheesecloth for the freshest juice.
  • Sweetener: Add honey gradually and taste after each addition for your preferred level of sweetness.

Instructions

Bloom the Gelatin:

  • Pour 3/4 cup cold water into a medium saucepan.
  • Sprinkle 5 tablespoons unflavored gelatin powder evenly over the surface.
  • Let it sit for 5 minutes to bloom, allowing the gelatin to absorb the water.

Brew the Green Tea:

  • Steep 4 tea bags in 1/2 cup of hot water according to package instructions to create a bold flavor.
  • Remove the tea bags, ensuring you have exactly 1/2 cup of tea.

Combine Ingredients:

  • Add the brewed green tea, 1/3 cup ginger juice, and 1/4 cup lemon juice to the bloomed gelatin in the saucepan.

Heat and Dissolve:

  • Heat the mixture over low heat, stirring continuously with a whisk until the gelatin completely dissolves.
  • Avoid boiling, as this may diminish the flavor and nutritional benefits.

Sweeten (Optional):

  • Taste the mixture and add honey if desired, stirring thoroughly to ensure it dissolves.

Pour and Set:

  • Carefully pour the mixture into silicone molds or a lightly greased baking dish.
  • Refrigerate for 2 hours, or until the chews are fully firm.

Remove or Cut:

  • Gently remove the chews from the silicone molds.
  • If using a baking dish, cut the set mixture into squares with a sharp knife.
