Honey Lime Rainbow Fruit Salad

For the Fruit Salad:
- 1 lb fresh strawberries chopped
- 1 lb fresh pineapple chopped
- 12 oz fresh blueberries
- 12 oz red grapes sliced in half
- 4 kiwis peeled and chopped
- 3 mandarin oranges peeled and segmented*
- 2 bananas sliced (optional)
For the Honey Lime Dressing:
- 1/4 cup honey
- 2 tsp lime zest zest of 2 medium limes
- 1 1/2 Tbsp fresh lime juice
In a large mixing bowl, combine all the chopped fruit.
In a small bowl, whisk together the honey, lime zest, and lime juice until well combined.
Pour the dressing over the fruit and gently toss until evenly coated.
Serve immediately.
Canned mandarin oranges (15 oz) in juice or light syrup, well-drained, can be used as a substitute for fresh.
Fruit can be prepped (except bananas) and the dressing made up to a day in advance.
Store separately in the refrigerator and mix just before serving.
