- 4 salmon fillets skin-on or skinless
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic minced
- 1/4 cup sun-dried tomatoes oil-packed, chopped
- 1/4 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Preheat the oven to 400°F (200°C).
Season the salmon: Pat the fillets dry with a paper towel. Drizzle with olive oil, then season with salt, pepper, and a sprinkle of thyme and basil.
Make the sauce:
In a large skillet, melt butter over medium heat.
Add garlic and sauté for 1 minute until fragrant.
Add chopped sun-dried tomatoes and cook for 2–3 minutes until softened.
Stir in heavy cream and chicken broth. Simmer for 3–4 minutes until slightly thickened.
Add Parmesan cheese, thyme, and basil. Stir until smooth and creamy. Season to taste with salt and pepper.
Bake the salmon:
Place seasoned salmon in a baking dish. Pour the cream sauce evenly over the fillets.
Bake for 15–20 minutes, or until salmon is cooked through and flakes easily with a fork.
Garnish and serve: Top with freshly chopped parsley and serve hot with your favorite sides (like rice, pasta, or roasted veggies).
For extra richness, add a splash of white wine to the sauce before baking.
This dish pairs beautifully with garlic mashed potatoes or lemony greens.
