Ingredients

  • 4 salmon fillets skin-on or skinless
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1/4 cup sun-dried tomatoes oil-packed, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

Preheat the oven to 400°F (200°C).

  • Season the salmon: Pat the fillets dry with a paper towel. Drizzle with olive oil, then season with salt, pepper, and a sprinkle of thyme and basil.

Make the sauce:

  • In a large skillet, melt butter over medium heat.
  • Add garlic and sauté for 1 minute until fragrant.
  • Add chopped sun-dried tomatoes and cook for 2–3 minutes until softened.
  • Stir in heavy cream and chicken broth. Simmer for 3–4 minutes until slightly thickened.
  • Add Parmesan cheese, thyme, and basil. Stir until smooth and creamy. Season to taste with salt and pepper.

Bake the salmon:

  • Place seasoned salmon in a baking dish. Pour the cream sauce evenly over the fillets.
  • Bake for 15–20 minutes, or until salmon is cooked through and flakes easily with a fork.
  • Garnish and serve: Top with freshly chopped parsley and serve hot with your favorite sides (like rice, pasta, or roasted veggies).

Notes

For extra richness, add a splash of white wine to the sauce before baking.
