For the Tortillas:
- ¼ cup vegetable oil
- 16 corn tortillas 6-inch
- Salt to taste
- For the Mexican Pizzas:
- 2 cups refried beans warmed (16-ounce can)
- 1 teaspoon vegetable oil
- 1 pound ground beef
- 1 tablespoon taco seasoning
- ¼ cup water
- 2 cups enchilada sauce or taco sauce
- 8 ounces cheddar cheese shredded
- Optional Toppings: Diced tomato sliced black olives, green onions, hot sauce
Make the Crispy Tortillas:
Heat the vegetable oil in a pan over medium heat.
Add the tortillas (1-2 at a time) and fry each side for 2-3 minutes until golden brown and crispy.
Place the fried tortillas on paper towels to drain excess oil and season lightly with salt.
Cook the Ground Beef:
Heat 1 teaspoon of vegetable oil in a pan over medium heat.
Add the ground beef and cook for 6-7 minutes, or until fully cooked.
Stir in the taco seasoning and ¼ cup water. Let it simmer for 10 minutes to allow the flavors to develop.
Assemble the Mexican Pizzas:
Preheat the oven to 350°F (175°C).
Place 8 crispy tortilla shells on a baking sheet.
Spread each tortilla with a layer of enchilada sauce, followed by refried beans, and then taco meat.
Top each with another crispy tortilla, then spread more enchilada sauce over the top and sprinkle with shredded cheese.
Add Toppings and Serve:
Remove from the oven and top with diced tomatoes, sliced black olives, green onions, and hot sauce, or your favorite toppings.
Serve immediately and enjoy!

Air Fryer Option: Instead of frying, lightly coat the tortillas with oil and air fry them at 375°F for 6-8 minutes, or until crispy.
