Ingredients

Chicken

  • 1 lb boneless skinless chicken breasts
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon granulated garlic
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon cracked black pepper
  • 2 to 3 tablespoons extra-virgin olive oil

Dressing

  • ¼ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white miso paste
  • 1 teaspoon Worcestershire sauce or tamari
  • 1 teaspoon anchovy paste
  • 1 garlic clove minced
  • Cracked black pepper to taste
  • cup avocado or grapeseed oil

Wraps

  • 4 large tortillas flour or whole wheat
  • 2 romaine hearts chopped
  • 1 cup croutons roughly chopped
  • ¼ cup grated Parmesan cheese

Instructions

Cook the Chicken:

  • Slice each chicken breast in half horizontally.
  • In a bowl, mix Parmesan, Italian seasoning, garlic, onion powder, salt, and pepper.
  • Coat both sides of the chicken with the seasoning.
  • Heat oil in a skillet over medium heat and cook the chicken for 7-10 minutes, flipping once.
  • Let rest, then slice into bite-sized pieces.

Make the Dressing:

  • In a bowl, whisk together mayonnaise, lemon juice, miso paste, Worcestershire, anchovy paste, garlic, and pepper.
  • Slowly whisk in the oil until well blended.

Assemble the Wraps:

  • Toss the romaine, croutons, Parmesan, and chicken with the dressing.
  • Place the salad mixture onto a warmed tortilla.
  • Roll tightly into a wrap, then slice in half.
  • Serve & Enjoy!

Notes

Storage: Wrap in parchment and foil; refrigerate up to 2 days.
