No-Bake Peanut Butter Trail Mix Bars

Ingredients

  • 1 cup old-fashioned rolled oats
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ cup mini chocolate chips
  • ¼ cup raisins
  • ¼ cup sunflower seeds
  • ¼ cup almonds or other nuts of choice
  • ¼ cup dried cranberries
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Prepare the Pan: Line an 8x8-inch baking dish with parchment paper or lightly grease it.
  • Combine Wet Ingredients: In a medium saucepan, heat the peanut butter and honey over low heat, stirring occasionally until smooth and well combined. Remove from heat and stir in the vanilla extract and pinch of salt.
  • Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, mini chocolate chips, raisins, sunflower seeds, almonds, and dried cranberries.
  • Combine Wet and Dry Ingredients: Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated and combined.
  • Press Into Pan: Transfer the mixture to the prepared baking dish and press it firmly into an even layer.
  • Chill: Place the bars in the refrigerator for at least 1 hour to firm up.
  • Serve and Enjoy: Once set, cut the bars into squares and enjoy these delicious, no-bake peanut butter trail mix bars as a snack or on-the-go treat!
