Ingredients

  • 4 tablespoons butter melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 lb boneless skinless chicken breasts, sliced into cutlets
  • Fresh parsley or basil for garnish (optional)

Instructions

Preheat & Prep:

  • Preheat oven to 425°F (218°C).
  • Line a baking sheet with parchment paper.

Make the Breading:

  • In a shallow dish, whisk melted butter, olive oil, and garlic powder.
  • In another bowl, mix panko, Parmesan, Italian seasoning, salt, and black pepper.

Slice & Coat the Chicken:

  • Butterfly chicken breasts to create even cutlets.
  • Dip each piece into the butter mixture, then coat with the breadcrumb mixture.
  • Place on the prepared baking sheet.

Bake:

  • Bake for 20 minutes, flipping halfway through.
  • Ensure the internal temperature reaches 165°F (74°C).

Serve:

  • Garnish with fresh herbs and serve hot.
