Ingredients

  • 8 slices of bread white or whole wheat, crusts removed
  • 8 breakfast sausage links
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter for cooking
  • Maple syrup for serving
  • Powdered sugar for garnish (optional)

Instructions

  • Cook the sausage links according to the package directions. Set aside to cool slightly.
  • While sausages are cooking, remove the crusts from each bread slice and flatten the bread using a rolling pin.
  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  • Place a sausage link on one end of each flattened bread slice. Roll the bread tightly around the sausage. Secure with a toothpick if needed.
  • Melt the butter in a skillet over medium heat.
  • Dip each roll-up into the egg mixture, making sure all sides are coated.
  • Place the roll-ups in the skillet and cook for 3–4 minutes, turning occasionally, until golden brown on all sides.
  • Remove from skillet, discard toothpicks if used, and serve warm with maple syrup and powdered sugar if desired.

Notes

Swap in turkey or plant-based sausage for a lighter or vegetarian option.
Assemble roll-ups in advance and store in the refrigerator overnight. Reheat in a skillet or oven before serving.
