- 8 slices of bread white or whole wheat, crusts removed
- 8 breakfast sausage links
- 4 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon butter for cooking
- Maple syrup for serving
- Powdered sugar for garnish (optional)
Cook the sausage links according to the package directions. Set aside to cool slightly.
While sausages are cooking, remove the crusts from each bread slice and flatten the bread using a rolling pin.
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
Place a sausage link on one end of each flattened bread slice. Roll the bread tightly around the sausage. Secure with a toothpick if needed.
Melt the butter in a skillet over medium heat.
Dip each roll-up into the egg mixture, making sure all sides are coated.
Place the roll-ups in the skillet and cook for 3–4 minutes, turning occasionally, until golden brown on all sides.
Remove from skillet, discard toothpicks if used, and serve warm with maple syrup and powdered sugar if desired.
Swap in turkey or plant-based sausage for a lighter or vegetarian option.
Assemble roll-ups in advance and store in the refrigerator overnight. Reheat in a skillet or oven before serving.
