Ingredients

  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar or substitute white wine vinegar, balsamic vinegar, or red wine vinegar
  • 1 ½ teaspoons honey or pure maple syrup
  • ½ teaspoon Dijon mustard
  • teaspoon kosher salt or fine sea salt
  • Black pepper to taste

Instructions

  • Combine all ingredients in a jar with a tight-fitting lid or in a small mixing bowl.
  • If using a jar, seal and shake until the vinaigrette is fully emulsified. If using a bowl, whisk until smooth and well combined.
  • Taste and adjust as needed—add more vinegar for acidity or olive oil for a milder flavor.
  • Use immediately, or store in an airtight container in the refrigerator for up to 2 weeks.

Notes

Vinaigrette may separate or solidify when chilled; let it come to room temperature and shake or whisk to recombine before serving.
Try different vinegars to suit your dish—white wine, red wine, or balsamic all work well.
