Ingredients

For the Strawberries:

  • 12-14 fresh strawberries washed, tops removed, and diced
  • 2 teaspoons granulated sugar

For the Pretzel Layer:

  • 1 1/2 cups mini pretzels
  • 2 tablespoons butter melted
  • Scant 1/8 teaspoon cinnamon

For the Whipped Cream Layer:

  • 1 cup heavy whipping cream
  • 2 tablespoons light brown sugar
  • 1/8 teaspoon vanilla extract
  • 1/8 teaspoon imitation strawberry extract

Instructions

  • Prepare the Strawberries: Place the diced strawberries in a bowl and sprinkle with granulated sugar. Stir to coat, then refrigerate for 30 minutes to allow the berries to release their natural juices.
  • Make the Pretzel Layer: Pulse the pretzels in a food processor until broken into small pieces, but not fully crushed. Add the melted butter and cinnamon, then pulse a couple of times until evenly combined.
  • Whip the Cream: In a stand mixer, beat the heavy whipping cream until stiff peaks form. Be careful not to overmix. Gently whisk in the brown sugar, vanilla extract, and strawberry extract until fully incorporated.
  • Assemble the Parfaits: In serving glasses or cups, layer the whipped cream mixture, strawberries, and pretzels. Repeat the layers until the cups are full.
  • Garnish and Serve: Top each parfait with a dollop of whipped cream, a slice of strawberry, and a pretzel. Serve immediately.

Notes

The strawberries and whipped cream can be prepared several hours ahead and refrigerated separately until ready to assemble.
Do not assemble the parfaits in advance, as the pretzels will become soggy.
