Ingredients

For the Cheesecake Filling:

  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream whipped to stiff peaks

For the Strawberry Filling:

  • 1 cup fresh strawberries diced
  • 2 tablespoons granulated sugar

For the Shortcake Layer:

  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter melted

For Assembly:

  • 6 large crepes or thin cake layers store-bought or homemade

For Garnish:

  • Powdered sugar for dusting before serving

Instructions

Make the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until well combined.

Prepare the Strawberry Filling:

  • Toss the diced strawberries with 2 tablespoons of sugar in a small bowl. Let them sit for 10 minutes to release their juices and soften.

Make the Shortcake Crumb:

  • In a medium bowl, mix the crushed shortbread cookies or graham crackers with the melted butter until the mixture resembles wet sand.

Assemble the Rolls:

  • Lay a crepe or thin cake layer flat on a clean work surface.
  • Spread a generous amount of the cheesecake filling over the entire crepe.
  • Sprinkle the shortcake crumb mixture evenly over the cheesecake layer.
  • Add a line of the macerated strawberries near one edge of the crepe.
  • Carefully roll the crepe tightly, starting from the strawberry-filled edge, to form a sushi roll shape.

Chill the Rolls:

  • Wrap each roll tightly in plastic wrap and refrigerate for at least 1 hour to set and firm up.

Slice and Serve:

  • Remove the rolls from the refrigerator and unwrap them. Slice into 1-inch pieces using a sharp knife.
  • Dust the rolls with powdered sugar before serving for an elegant presentation.
